Amarguinha with Tonic - The Perfect Combination

Some combinations seem simple, but when done well, they are unbeatable. Amarguinha with tonic is one of them. Two ingredients, lots of ice, and the result is a refreshing drink, with character and a complexity that surprises those who try it for the first time.

In Portugal, it is one of the most common combinations in bars and outdoor cafés, especially in the south. Outside the country, more and more people are discovering it and understanding why it works so well. In this article, we explain how to prepare it correctly, which tonic to choose, and how to vary it depending on the occasion.

Why it works so well

Amarguinha has an elegant flavour, with a bitter almond bitterness that lingers in the mouth. Tonic, in turn, adds freshness, fizz, and its own quinine bitterness. The two bitters complement each other without competing, and the result is a much more interesting blend than the sum of its parts.

Unlike other sweet liqueurs, Amarguinha does not need tonic to compensate for excessive sugar. This means that the blend is naturally balanced, without becoming cloying, and the bitter almond flavour remains present from the first sip to the last.

The bitterness of Amarguinha and the bitterness of quinine do not cancel each other out; they reinforce each other, creating something more complex than either one separately.

The Recipe

There are no secrets. Amarguinha with tonic is a two-ingredient blend, and the difference lies in the details: the ice, the tonic, the order in which they are added, and how it is served.

What you need:

5 cl of Amarguinha Original
150 ml of dry tonic water
Plenty of ice
Lemon slice

The process:

Start with the glass. It must be tall and filled to the brim with ice, not half-full, but to the brim. The ice maintains the temperature and prevents the drink from diluting too quickly.

Add the Amarguinha over the ice. Then comes the tonic, slowly and in a thin stream, slightly tilting the glass if necessary so that it runs down the side without breaking the bubbles. Just one gentle stir to combine. Nothing more.

Finish with a lemon slice on the rim, or a squeezed lemon peel over the glass if you want a more aromatic citrus touch.

Which tonic to choose

Not all tonics work the same with Amarguinha. The choice of tonic is probably the detail that makes the most difference in the final result.

Dry tonic, with little sugar. This is the best option. A tonic with less sweetness allows the bitter almond flavour to be the star. Tonics with too much sugar mask the character of Amarguinha, and the drink loses what makes it interesting.

Tonic with pronounced quinine. The bitterness of quinine complements the bitterness of bitter almond very well. British-style tonics, with more quinine and less sugar, are the most recommended for this drink.

Very cold tonic. It seems obvious but it makes a difference. Room temperature tonic not only provides less freshness but also loses its fizz faster when it comes into contact with ice.

Variations

With lemon peel instead of a slice. Instead of a slice, squeeze a lemon peel over the glass before placing it as a garnish. This releases the aromatic oils from the peel and adds a more subtle yet intense citrus note.

With a sprig of rosemary. A less common but very effective variation: a fresh sprig of rosemary as a garnish adds an herbal aromatic note that complements the almond bitterness. Use it without stirring so the aroma is subtle.

Tips for serving well

What is the correct proportion of Amarguinha and tonic?
The classic proportion is 1 part Amarguinha to 3 parts tonic — that is, 5 cl of Amarguinha and about 150 ml of tonic. If you prefer a more intense drink, you can reduce the tonic to 120 ml.

It's not the most recommended combination. Amarguinha Creme has a velvety texture that doesn't mix well with the fizz of tonic. For drinks with tonic, the Original version is the most suitable.
