Its acclaim has already crossed borders: at the IWSC, it was highlighted for its aromas of creamy almond, soft notes of marzipan on the palate, and a long, persistent finish.
The combination of Amarguinha Original, freshly squeezed lemon juice, and egg white results in an almond sour that is balanced, fresh, and surprisingly smooth. A simple recipe with only five ingredients and a shaker that you can prepare at home in less than two minutes.

The recipe

- 5 cl Amarguinha Original
- 3 cl freshly squeezed lemon juice
- 2 cl egg white
- 3 drops of Angostura bitters
- Plenty of ice
Preparation
- Fill a glass with ice to chill it while you prepare the cocktail.
- Add all the ingredients to a shaker along with ice.
- Shake vigorously for about 15 seconds.
- Remove the ice from the glass and strain the cocktail directly into it.
- Finish with 3 drops of Angostura bitters on top of the foam to add aroma.
The secret to the foam
The egg white is responsible for the silky texture and the characteristic foam of the Amarguinha Sour.
If you prefer not to use egg, you can substitute it with aquafaba, the liquid resulting from cooking chickpeas. The result is very similar and allows you to achieve an equally appealing foam.
And if you prefer not to use either option, that is no problem: the Amarguinha Sour is still delicious, it will just have a lighter texture and will not feature the characteristic foam of a sour.
What you should know
Why you should use fresh lemon
Bottled lemon juice does not produce the same result. The acidity of freshly squeezed lemon juice is essential to naturally balance the bitter notes of the almond.
It is one of the ingredients where it is truly worth opting for the fresh version.
Angostura makes the difference
The three drops of Angostura are not just for decoration. They add an aromatic and spiced note that complements the bitter character of the Amarguinha and helps balance the whole.
Without Angostura, the cocktail works. With Angostura, it gains an additional aromatic dimension.
Don't have a shaker?
If you don't have a shaker at home, you can use a jar with an airtight lid.
The result will be very similar, provided you shake it hard and for long enough for the egg white to emulsify and form the cocktail's characteristic foam.
